Well, that’s what I’m doing. Sometimes I do enjoy being in the kitchen for hours creating something gastronomically great. But I have a life too, and so I don’t want being in the kitchen to be my WHOLE life! When would I have time to share all of these great recipes with all of you wonderful people? I do subscribe to the KISS method of cooking (keep it simple, sunshine)! You thought I was going to say something else, didn’t you?
This dish is not only easy, but versatile as well. When we had it, I put it over rice, but it could also be put over pasta or even made into a sandwich. This dish can also be made as spicy or as mild as you like, according to the type of sausage you use. If you like it super spicy, add a dash or two of cayenne pepper or some creole seasoning.
I love how quickly you can prepare this meal. It’s really fast to chop up the ingredients and throw it all into the slow cooker, turn it on and go! Now that’s the kind of fast food I can get behind!! Let it cook all day and your house will smell fantastic!
This meal is not only a slow cooker meal, but it’s a freezer meal as well, so you can put all of the ingredients in a gallon freezer bag and freeze for a later meal.
When served over rice, this recipe is gluten free. For those of you who eat grain free, you can serve this over some cauliflower “rice” and voila….grain free and fabulous meal!
- 1 lb Italian sausage, uncured
- 1 lg onion, chopped
- 1 green pepper, chopped
- 1-2 cans diced tomatoes
- 3-4 cloves garlic, finely chopped
- 1/2 tsp unrefined sea salt
- Put all ingredients into a gallon freezer bag.
- Freeze until ready to use.
- When ready to use, place contents in slow cooker and cook on low for 6 hours or on high for 4 hours.
