Taco Bowl

When better managing your energy, it’s important to spend more time cooking high energy, high vibrational meals. But eating better should never mean having to spend hours and hours each day in the kitchen! Simple, quick, easy recipes are great to have in your food repertoire and this taco bowl is definitely one of them!

Taco bowls only take about 30 minutes to prepare from start to finish. And it allows you to have a nourishing meal that will support your energetic needs, not deplete them!

I like this meal because it can be completely done on the top of your stove. If you live someplace with very hot summers like I do, it allows you to cook a good meal, without turning on the oven! Here in South Carolina, our summers are so hot that I avoid using my oven as much as possible!

But I eat this meal throughout the year because it’s not only tasty, but simple! and I’m all about that!

Substitutions

Rice would typically be used in a bowl meal like this. But I typically use riced cauliflower instead of rice in this dish. That makes it grain free. But feel free to substitute rice or quinoa if that works well for your body.

If you do opt to use riced cauliflower, now you can usually find it pre-riced at most grocery stores. Look in either the produce section, or with the frozen vegetables.

Do you prefer to rice your own cauliflower? When making your own riced cauliflower, cut one head of cauliflower into smaller chunks, removing all of the green leafs. Use either the medium holes on a traditional cheese grater or pulse the cauliflower in a food processor until it has the consistency of rice.

Store bought taco seasoning packets can be filled with unsavory ingredients that are best avoided. This recipe uses regular spices so that you can enjoy that taco taste. But you’ll be happy knowing exactly what you are putting in your body! This also allows you to make it as spicy or mild as you want! Leave out the cayenne pepper for a mild taste experience!

This ground beef taco bowl recipe is naturally gluten free, even if you opt to use rice. And it’s grain free, low carb and Paleo as well when using riced cauliflower. If you eat a little dairy in your diet, feel free to add a little cheese to the bowl….yum!

Recipe Ingredients

  • 1 head cauliflower riced (or pre-prepared riced cauliflower that has 4 servings)
  • 1 lb ground beef
  • 1 large tomato (diced)
  • 2 avocados (diced)
  • 1 onion (diced)
  • 1/2 red bell pepper (diced)
  • Black olives (sliced)
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp water
  • 1 tbsp of coconut oil or avocado oil

Recipe Instructions

  1. In a large skillet, brown the ground beef.
  2. Add the onions and red bell pepper and cook until the onions are translucent.
  3. Add the seasonings and water and mix well.
  4. In another skillet add the coconut or avocado oil.
  5. Heat to medium high.
  6. Add the riced cauliflower, cover skillet.
  7. Allow to cook for 7-8 minutes.
  8. Divide the riced cauliflower into four bowls.
  9. Top with ground beef, tomatoes, avocado and olives.
