Tomato and Cucumber Salad

It’s so important energetically to have lots of fresh fruits and vegetables in your diet! If you need ideas, this tomato and cucumber salad is a perfect option! Great high vibing food!

While it may officially be fall, here in South Carolina the temperatures are often still very summer like. But that also means that you can still get fresh summer produce like tomatoes and cucumbers from the local farmer’s market or from your own back yard!

Fresh produce (particularly organic) is a great way to raise your vibration! Rich in nutrients, these foods easily help you to stay vibrationally healthy. I love to get plenty of fresh fruits, vegetables and herbs throughout the year. But it is important to take advantage of the produce available locally during the growing season.

How long has your produce been sitting?

Fresh local produce hasn’t been shipped long distances. The longer fruit and vegetables sit after being picked, the lower the energy level.  An apple that was picked two months ago and coated in wax to preserve freshness won’t have as much energy as one picked today right off the tree.

This year, there are still plenty of great local tomatoes and cucumbers available. When they are plentiful, I love making this simple salad. Rich in flavor, this salad is delightful for the tastebuds. It is easily paired with freshly grilled meat for an amazing meal.

I actually love to put this salad on top of a grilled burger. It is SO good!

This recipe is naturally gluten and grain free (as long as your dressing is too)! I’ve made this recipe for two because I’m a single girl and love to have some leftovers for another meal. But you can definitely make this recipe larger! It’s very simple to scale up!

This recipe is perfect for cookouts and parties too!

Recipe Ingredients

  • 1 cucumber, cut into small cubes
  • 1 tomato, chopped into small pieces
  • 1/4 cup sweet onion, chopped
  • Greek dressing

  1. Mix all ingredients together in mixing bowl
  2. Serve
