Although many may consider this a breakfast or brunch recipe, it is actually a favorite of mine to make for dinner! So yummy and less work than an omelette too!
I have never been a real big breakfast person. I’m not sure why, but eating a lot of solid food so soon after waking up in the morning makes me a little nauseous. It’s been that way since I was a child. I have always had to wait about two hours before that feeling goes away…although I can drink a good smoothie and won’t experience that issue. So now I opt for a good, protein rich smoothie to get me going in the morning.
But sometimes I really crave breakfast foods! Hey, a girl occasionally needs some french toast or a good omelette? So although it’s unconventional, I often eat breakfast for either lunch or dinner. What can I say? I’m a rule breaker! Recently, I’ve moved away from making omelettes because they tend to be more labor intensive than I like. Now when an omelette craving strikes, I make a frittata instead!
I love making frittatas because they are super simple to make and taste so good. It takes much less time to make a frittata compared to an omelette! And there are so many different recipes and combinations out there, that you are just limited by your imagination and your taste buds! You could make a different frittata every week!
This frittata recipe gives you some ideas of what you can use….but it gives you a lot of freedom to choose!
This is the cast iron skillet that I use with this recipe. It is 8 inches and works really well (although, boy is it heavy!)

- 8 Eggs beaten
- 1/2 tsp unrefined sea salt
- 1/8 tsp black pepper
- 2 tbsp butter
- 1 1/2-2 cups chopped veggies choose your favorites such as...mushrooms, tomatoes, zucchini, asparagus, spinach
- 1/3 cup onion finely chopped
- 1/2 cup meat sausage, bacon, ham, ground beef, etc.
- 1/2 cup cheese shredded (use your favorite cheese) When using stronger cheese like feta or blue...you may want to use 1/4 cup.
Preheat oven to 400 degrees F.
In medium bowl, combine eggs, salt, pepper.
Heat butter in an 8 inch, oven proof skillet.
Add vegetables and cook over medium high heat until tender.
Pour the egg mixture over the vegetables.
Sprinkle cheese on top..
Place the filled skillet in the oven and cook for 20-25 minutes.
Remove from oven and allow to sit for 5-10 minutes
