I love omelettes. But one downfall about making omelettes is that they are pretty labor intensive. It requires use of more than one pan as well. Typically I use two for omelettes….one for the eggs and the other to saute vegetables or cook up some sausage. The beauty of a frittata like this ham and cheese frittata, is that you can enjoy the same great taste of an omelette, without all of the work! This is even more beneficial if you have more than one person to cook for! In that situation, a frittata is the perfect solution!
Now, let’s get to this lovely little frittata. I really love a good uncured ham. No, I REALLY love ham! And so I try to find ways to incorporate it into different meals so that I can fulfill my regular ham needs. I’ve actually been meaning to make this meal for awhile, since frittatas are so simple, but yet so amazingly good.
And ham and cheese in the frittata….mmmmm………
I also added some onion, which really increased the flavor as well as garlic, because, well….garlic not only tastes good, and gives great flavor to meals, but it’s good for you too! I chopped a few mushrooms as well, to give the frittata a little body. If there are other vegetables that you enjoy…add them! Make it what you want!
This is a perfect recipe to use your favorite cast iron skillet for. I used a 12 inch skillet for this recipe and it turned out very well! I have also used a glass baking pan as well, and that has worked well too.
I love to eat this with some fresh fruit…berries or diced melon. The fresh fruit brings a nice sweetness to balance out the savory flavors of the frittata.
This satisfying meal is naturally gluten and grain free and will keep you full until your next meal.
Ham and Cheese Frittata
- 8 eggs
- 2 tablespoons butter
- 1 cup ham diced
- 3/4 cup cheddar cheese shredded
- 1/2 cup onion diced
- 1/2 cup mushrooms chopped
- 2 cloves garlic minced
Preheat oven to 400 degrees F.
Melt butter in oven safe skillet.
Add garlic, onion and mushroom and saute until onion is translucent.
In a small bowl, beat the eggs.
Pour them over the ingredients in the skillet.
Top with shredded cheese.
Place skillet into the preheated oven.
Bake for 20-25 minutes.
