I have really been into creating new soup and stew recipes for the Instant Pot in the past few weeks. And although I know I probably sound like a broken record, I’m not going to stop! My Instant Pot makes cooking so fast and even easier! And knowing that I’m able to create healthy, home cooked meals makes me feel even better! Especially since I have found the joys of using bone broth and what great taste it lends to the soups I create.
Besides the great taste, I know when I eat bone broth based soups, I am getting some great nutrients too! The nutrient content in bone broth is easy for the digestive system to absorb and is a great aid for helping to heal your gut! This recipe is one of those that I literally just threw together…..and it worked. That is the beautiful thing about soup. It’s hard to do it wrong!
When using rice, this recipe is not super brothy. The rice expands quite a bit and makes it a thicker soup. It will be more brothy if you use cauliflower “rice” which doesn’t expand the same way conventional rice does.
This soup is naturally gluten free. If you are interested in grain free recipes, you can substitute in cauliflower “rice” instead of traditional rice.
Instant Pot Sausage and Rice Soup
- 1/2 lb ground sausage
- 3 cups broth bone or vegetable
- 1 lg carrot peeled and sliced
- 1 stalk celery chopped
- 1/2 cup onion chopped
- 1/2 cup white rice soaked but uncooked
- 2 cloves garlic minced
- 1/2 tsp oregano
- 1/4 tsp sea salt
Turn Instant Pot on Saute.
Add the ground sausage and saute until browned
Add onions, carrots, celery and garlic.
Saute until onions are translucent.
Hit the Cancel button.
Add broth and seasoning.
Replace lid, and press the soup button. Set for 9 minutes cook time.
Once done cooking, let naturally release for at least 5 minutes. After that you can either quick release and serve, or allow it to naturally release fully.
